From the Galley

Mama Josie’s fictional greatest hits — adapted for a kitchen that doesn’t roll with the waves.

Fictional recipes, real food. These dishes are invented for Martin’s world, but the recipes below are written to actually work in a real kitchen. The biscuit is the exception — nothing can make that biscuit edible, which is rather the point.

The Theological Stew

The stew of the Squall’s tenth morning, still described in Gullhaven as “theological.” A slow beef-and-barley stew: brown the beef hard, add onions, carrots, barley, and a bay leaf, cover with stock, and simmer low for three hours — or, as Mama Josie insists, “until it stops arguing.” Season like you mean it. Serves a watch.

Storm Bread

A dense, forgiving loaf built for bad weather: strong flour, water, salt, yeast, and a spoonful of molasses. Knead ten minutes, rise until doubled, bake hot until it sounds hollow. Martin claims a loaf of this once survived a storm that took a topsail. The loaf declined to comment.

The Doorstop Biscuit

Flour, water, salt, baked twice until completely without mercy. Officially a biscuit; functionally a doorstop, a paperweight, and — once, during a tavern dispute in Brass Anchorage — a weapon. Do not attempt to eat. The crew keeps one on the mess table as a reminder of Mama Josie’s standards.

Lantern-Isle Tea

Strong black tea with ginger and honey, served scalding in tin mugs. The official drink of the dawn watch. Martin takes his with two sugars and the sunrise.
