Al dente
adjective. The ideal state of being: firm, ready, never mushy. Also the capital city. "Stay al dente out there."
Dough
noun. Currency. "Big dough" means big money; "knead the dough" means earn a living.
Extrusion
noun. Birth, for pasta people — being pressed into shape. "Extrusion day" is a birthday.
Fusilli
noun. Spiral pasta; also, by extension, anyone curly, twisty, or hard to pin down. "A real fusilli" is high praise in the Flats.
The Golden Grain Club
proper noun. Willie's jazz club in the Harlem Quarter; the city's premier late-night room.
The Golden Lean
proper noun. Willie's signature dance move; the deciding move of the first Dance-Off Accords. Imitated on playgrounds city-wide.
The Great Boil
proper noun. The creation myth: eight minutes that made the world. Also the annual anniversary feast.
Harlem Quarter
proper noun. Willie's neighborhood; jazz clubs, brownstone loaves, stoops.
Instigator
noun. In Macaronis slang, a compliment: one who starts good things. "Harlem's smoothest instigator" is Willie's app-card title.
Riddim
noun. The beat, the groove — chiefly in the Jerkwater Beach music scene. "One riddim" means everyone's moving together.
Second Simmer
noun. The parade tradition: when something wonderful happens, a brass-led parade forms behind it.
Soggy
adjective. The worst thing a pasta person can be: overcooked, limp, without resolve. The Soggy Man is the childhood bogeyman.
Stay golden
phrase. Willie's motto and sign-off; the upgraded local greeting.
Whole wheat
adjective. Hearty, unrefined, substantial — and Willie's defining ingredient. "Whole wheat" as praise means the real thing, no shortcuts.
